Lola Pearl bakes lemon meringue pie birthday cupcakes!

These cupcakes were a birthday present to myself with love. A delicious, moist lemon cake is filled with homemade lemon curd, and then topped with a traditional french meringue. (Toasted for 5 minutes in the oven for that authentic lemon meringue pie experience!)

I couldn't resist taking this picture of my pup, eyeing the cupcake as I stuffed my face ;)
