Lasagna Cupcakes
These tasty devils are just what the doctor ordered for a girls night in. Assemble them just like you would normal lasagna in the order below. Double deck them and bake in a preheated 375 degree oven for 18-20 minutes or until the edges turn golden. #yum!

What you need: 
Cupcake baking pans
Non-Stick cooking spray 
Won-Ton wrappers
Ground Turkey (or beef)
Spaghetti sauce
Ricotta cheese

Jalapeno Popper Dip - RECIPE


12 oz chopped jalapenos
1 can minced green chiles
8 oz package cream cheese, room temperature
1 cup cottage cheese
1 1/2 cups shredded cheese (+ ½  cups)
¼ cup bread crumbs
1 Tablespoon dried oregano

Mix ingredients and add to an oven safe pan sprayed with non-stick spray. Sprinkle top of mixture with remaining cheese and ½ cup bread crumbs.

Bake 400 for 20 mins or until bubbly.
Serve with chips or crackers! 



Peanut Butter Bacon Canapes - RECIPE

1. Preheat oven at 425 degrees.
2. Brush crust less bread with peanut butter, cut into quarters.
3. Add cooked bacon.
3. Place on non-stick baking sheet.
4. Bake for 8-10 minutes until bacon is crisp.
5. Drizzled chocolate is optional!


Peanut Butter Pasta- RECIPE
1 Box Whole Wheat Thin Spaghetti
8 oz. Chicken Tenders, cut into thin strips
Sauteed vegetables: 2 Cups Broccoli, 1 Red Bell Pepper - thinly sliced 

Peanut Butter Sauce

            ½ Cup Peanut Butter
            2 Tablespoons Low Sodium Soy Sauce

            1 Tablespoon  Honey
            2 Tablespoons Rice Vinegar

            3 Tablespoons Hot Water

            ¼ Tsp + Sraracha (hot chili sauce)

            1 Tablespoon Minced Garlic
            1 ½ Tablespoons  Minced Ginger 
            2 Tablespoons Sesame Oil

Garnish: 1 Teaspoon sesame seeds, 2 Scallions – chopped 

STEPS:
1. Cook pasta in a large pot of boiling water until al dente
2. Prepare sauce: Mix peanut butter, soy sauce, honey, rice vinegar, water, sraracha, garlic, and ginger in a large saucepan over medium low heat
5.  Add pasta, sautéed vegetables, and chicken. Toss to coat all ingredients.  Garnish with sesame seeds and shopped scallions.

When the temperature drops into the single digits, there is no better time for homemade soup. 
Intro the herbes de Provence
Combine these herbs and enjoy a fabulous melange of flavor of the French countryside. You can also use the combination when making a rice or chicken dish.

3 tablespoons dried thyme
2 tablespoons dried savory
1 tablespoon dried oregano
3 teaspoons dried rosemary
2 teaspoons dried marjoram
1 tablespoon dried lavender flowers (optional)


Clams Casino Dip:
Don't be surprised if guests reach for this with a spoon sans crackers! So delicious and easy, the aroma alone will bring guests floating into the kitchen! 

What you need:
3 cans of minced clams
32 ritz crackers 
1 can of bacon bits
1 red pepper, chopped
One small onion, chopped
One stalk of celery, chopped
1 stick of butter

Preheat oven at 375
Combine ingredients and bake for 35 mins.

Black Olive Penguins:

What you need
Pitted black olives
Cream cheese
Carrots
Toothpicks


Yum. Yum. Yum. That's all there is to say about this delicious appetizer!


What you need:
pizza crust (Boboli, or refrigerated dough, whichever you have/prefer!)
approx 8 oz smoked salmon, or lox pieces
8 oz cream cheese, room temp
1 medium red onion, chopped
1-2 tablespoons dill (fresh is best, but dried will do!)

Preparation:
Bake pizza crust as per instructions on dough and let cool completely on a cooling rack.

Mix cream cheese and onions in a medium sized bowl using a spatula or wooden spoon. Spread over cooled pizza crust.

Place salmon over cream cheese mixture and sprinkle with dill. Cut into slices and serve!
