CROISSANT + REUBEN = CREUBEN

There are a lot of steps to make Creubens, but it's worth it!! Ideally, you would make the croissants ahead of time, with a plan to have the corned beef in the crock pot while you work. You can certainly use crescent roll dough from the refrigerator section of your local grocer, or, if you're feeling bold, you could ask your local baker for their croissant scrap. It does exist! Whether the baker will part with it, you won't know until you ask!

If you want to make your own French pastry, I'd recommend a sourdough croissant recipe, like this. Be sure to make an egg wash with one egg and a splash of milk, to ensure that golden glow.

Happy cooking!!

What you need:

Canned sauerkraut
Swiss cheese slices
1.5-2 pounds corned beef brisket with spice packet
2 (12 oz) bottles of beer
2 bay leaves
¼ cup peppercorns
1 bulb garlic cloves, separated and peeled
Thousand island dressing
Croissant or crescent roll dough
eggwash (egg + milk)

1000 Island Dressing:
Equal parts:
Mustard (Weber’s )
Paprika
Ketchup
Mayo (Duke’s )
Chopped dill pickles
3 splashes worcestershire
1/2 tsp horseradish

Place the corned beef briskets into your crock pot. Pour in the beer, covering the meat 1 inch. Add the bay leaves, peppercorns and garlic cloves. Cover, and bring to a boil on high. Once boiling, reduce to medium/low and simmer for 3-4 hours, keeping the meat covered in liquid.  Carefully remove the meat from the pot. Allow it to rest on a cutting board for about 10 minutes. Slice meat into strips.

Roll out crescent rolls and place the following in this order on the widest part of the dough:

Cheese
Meat
Sauerkraut
Dressing

Roll, carefully keeping ingredients intact. Make an egg wash by mixing an egg and milk, and brush onto pastries with a pastry brush or blotted paper towel.

Bake at the appropriate temperature for whatever dough you are using. Have fun!

Naked cakes aren't just for weddings!

A summer birthday is a wonderful reason to make a naked cake. Add a theme of a garden party - et voila! This beauty used the local hydrangeas and greenery around the house to beautify!
This weekend, our Bae, Karina Lopez of KC You There fame, turned 30, and had a beautiful backyard bash in the Hamptons. Check out her blog for all the gorgeous pics! KCyouthere.com

This summer, make berry tarts!

People get intimated by the unknown. If you don't know how easy (and fun) building a fruit tart is, you may never get that joy of putting the last piece of fruit and looking at your masterpiece with pride!

Hopefully, this berry season will inspire you to have fun with fruit tarts. You can either buy pre-made pie shells, or you can make your own pie dough, roll it out, fill tart shell tins, bake and then fill with your favorite custard recipe, or even cheesecake filling (#yum)....

Behind the Apron TIP: While it can be very pretty to place your berries in a circular pattern, you can choose to group like-berries together like in the above picture!

Eat Your Feelings: Valentine's Day Cookie Edition

Nothing like hearing the words “eat your feelings” when it’s Valentine’s Day. It is best to eat your feelings during the month of February. February has the holiday for lovers. Lovers of chocolate. Lovers of sweet and tangy. Chocolate covered pieces of sweet. Chocolate covered this, pink and red that.
This time of year, conversation hearts are the perfect opportunity to give and eat what you feel. Remember, if you get what you give, give yourself or your special someone a plate of conversation heart cookies. Grab a “big daddy” or “love stinks”.

But remember: focus on you and you will certainly receive!
